Combine the water with salt in the bread machine. Sprinkle the flour on top. Make a hole in the middle and place in it the yeast.

Let them rest for 20 to 25 minutes. Choose the knead setting on the machine for 10 minutes.

Sprinkle flour on a surface and place the dough on it. Add 1/4 C of flour and knead it into the dough.

The dough should be sticky and elastic. Coat the dough with olive oil. Put in a bowl. Cover it. Chill it in the fridge overnight.

Let it sit on the counter until it becomes at room temperature.
